Chicken Meatballs w/ Spicy Glaze

Ingredients
Chicken Meatballs
- 1 Onion
- 2 cloves Garlic
- 4 Boneless Chicken Breasts (cleaned)
- ½ cup Hellmann's Mayonnaise
- ½ bottle Sweet & Spicy Pepper Sauce
- 2 Eggs
- 2 tbsp Olive Oil
- 3 tsp Fresh Flat Leaf Parsley
- 1 tsp Salt
- ½ tsp Crushed Black Pepper
- 1 cup Breadcrumbs
Spicy Glaze
- ½ bottle Spicy Pepper Sauce (always have another bottle on hand if more sauce - glaze - is needed)
Instructions
- In food processor pulse Onion and Garlic.
- Add Chicken Breasts and pulse well.
- Add Mayonnaise, Sweet & Spicy Pepper Sauce, Eggs, Olive Oil, Flat Leaf Parsley, Salt and Crushed Black Pepper and blend.
- Slowly add Breadcrumbs until mixture holds its shape.
- Form meatballs in desired sizes - 1 oz ice cream scoop is perfect for hors d'oeuvres. Place on parchment-lined cookie sheet and lightly drizzle with olive oil.
- Bake in 350℉ oven for 30 minutes or until meatballs are firm and fully cooked.
- Remove pan from oven and toss meatballs with remaining ½ bottle of Spicy Pepper Sauce. Always have another bottle on hand if more sauce (glaze) is needed.
