Asparagus Puffs w/ Red Pepper Cream
This is an elegant hors d’oeuvre that you can prepare way in advance – keep in the freezer – and bake when ready to use.

Ingredients
- 1 bunch Asparagus
- Sweet Red Pepper Coulis (prepared separately)
- Puff Pastry Squares (3-inch squares are perfect)
Instructions
- Blanch and chill Asparagus.
- Lay out small squares of puff pastry. Brush Sweet Red Pepper Coulis on pastry.
- Place asparagus pieces on pastry square and roll to cover asparagus. Repeat process until all pastry, coulis and asparagus are used. Place asparagus logs in freezer for 10 minutes to set.
- Place frozen pieces on a parchment-lined baking dish, brush with egg wash and bake in a 375℉ oven for 12-15 minutes or until puffs are golden brown.
