Pulled Pork

This is an awesome dish that is worth every hour it takes (but honestly the oven does all the work).

Marinating Time 12 hours
Total Time 16 hours 15 minutes

Ingredients
  

  • 1 Pork Butt or Pork Shoulder (large; leave fat in tact)
  • 1 cup Orange Juice
  • ½ cup Lemon Juice
  • ½ cup Olive Oil
  • ½ cup Dark Brown Sugar
  • ½ cup Dark Molasses
  • ½ cup Crushed Pineapple
  • 1 cup Catsup
  • 1 cup BBQ Sauce
  • ¼ cup Brown Mustard
  • ¼ cup White Rice Vinegar
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 2 tbsp Cumin
  • 2 tbsp Coriander
  • 2 tbsp Paprika
  • 2 Diced Onions
  • 2 cloves Minced Garlic
  • 2 cups Water

Instructions
 

  • Rinse Pork Butt or Pork Shoulder.
  • Make marinade mixing Orange Juice, Lemon Juice, Olive Oil, Dark Brown Sugar, Dark Molasses, Apricot Preserve, Crushed Pineapple, Catsup, BBQ Sauce, Brown Mustard, White Rice Vinegar, Salt, Pepper, Cumin, Coriander, Paprika, Onions, Garlic and Water. Pour marinade over pork and refrigerate overnight.
  • Slow roast pork with marinade in 300℉ oven covered for 4 hours. Check roast to see if it falls apart with a fork - if so it's done. If not close the oven door and lower temp to 250℉ and let cook one more hour.
  • Serve with creamy cole slaw and potato rolls.
