Peach Cobbler

Ingredients
- 4-6 Fresh Sliced & Peeled Peaches (or 1 large drained jar of peaches)
Batter
- 2 sticks Butter
- 1 cup Sugar
- 1 pinch Salt
- 2 Eggs
- 1 tbsp Pure Vanilla Extract
- Zest & Juice of One Lemon
- 1 cup Flour
- 1 tsp Baking Soda
- 1 tbsp Baking Powder
- ½ tsp Cinnamon
Crumb Topping
- 1 cup Dark Brown Sugar
- 1 cup Flour
- 1 pinch Salt
- ½ lb Cold Butter (cut into cubes)
Instructions
- In buttered baking dish place Peaches.
- In bowl of stand mixer cream together Butter, Sugar and Salt.
- Add Eggs, Pure Vanilla Extract, Lemon Zest and Lemon Juice.
- Add Flour, Baking Soda, Baking Powder and Cinnamon. Blend well and pour batter over fruit.
Crumb Topping
- In mixing bowl place Dark Brown Sugar, Flour, Salt and Cold Butter Cubes.
- With cool hands (wash hands with cold water and towel dry) crumble into large crumb chunks. Sprinkle over batter.
Cook
- Bake in 350℉ oven for 40-45 minutes or until golden.
Notes
This can be done with many fruits such as apples, blueberries, pears, mixed berries, etc... be creative!
