Mixed Green Salad w/ Balsamic Vinaigrette Grilled Peaches & Mozzarella

Ingredients
Balsamic Vinaigrette
- 2 cups Olive Oil
- 1 cup Balsamic Vinegar
- 1 clove Garlic
- 1 tbsp Dijon Mustard
- 1 tbsp Sugar
- ½ tsp Salt
- ½ tsp Black Pepper
Salad
- Salad Greens (whatever is fresh and available)
- ½ lb Fresh Mozzarella (sliced or diced)
- Fresh Peaches (split and pit)
- 2 tbsp Olive Oil
Instructions
Balsamic Vinaigrette
- Place Olive Oil, Balsamic Vinegar, Garlic, Dijon Mustard, Sugar, Salt and Black Pepper in blender or food processor and puree until smooth. Keep refrigerated until needed.
Salad and Peaches
- Wash and dry Salad Greens.
- Brush peaches with Olive Oil and grill split side down on a hot grill for 2-3 minutes.
Assemble
- Place greens on a platter and top with Mozzarella and grilled Peaches and drizzle with Balsamic Vinaigrette.
