Mixed Green Salad w/ Balsamic Vinaigrette Grilled Peaches & Mozzarella

This is a real summer treat.

Ingredients
  

Balsamic Vinaigrette

  • 2 cups Olive Oil
  • 1 cup Balsamic Vinegar
  • 1 clove Garlic
  • 1 tbsp Dijon Mustard
  • 1 tbsp Sugar
  • ½ tsp Salt
  • ½ tsp Black Pepper

Salad

  • Salad Greens (whatever is fresh and available)
  • ½ lb Fresh Mozzarella (sliced or diced)
  • Fresh Peaches (split and pit)
  • 2 tbsp Olive Oil

Instructions
 

Balsamic Vinaigrette

  • Place Olive Oil, Balsamic Vinegar, Garlic, Dijon Mustard, Sugar, Salt and Black Pepper in blender or food processor and puree until smooth. Keep refrigerated until needed.

Salad and Peaches

  • Wash and dry Salad Greens.
  • Brush peaches with Olive Oil and grill split side down on a hot grill for 2-3 minutes.

Assemble

  • Place greens on a platter and top with Mozzarella and grilled Peaches and drizzle with Balsamic Vinaigrette.
