Mashed Cauliflower
These are so much healthier than creamy mashed potatoes and just as good. They reheat beautifully as well.

Ingredients
- 1-2 heads Cauliflower
- 1 chopped Onion
- 3 cloves Garlic
- 3-4 tbsp Smart Balance Lite (non-dairy buttery spread)
- 1 tbsp Salt
- ½ tbsp Crushed Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
Instructions
- Clean and wash heads of Cauliflower. Place cauliflower in a pot with cold salted water, Onion and Garlic.
- Bring to a boil and remove from heat and let rest covered for 5 minutes or until cauliflower is very tender. With a potato masher mash cauliflower until creamy.
- Add Smart Balance Lite, Salt, Crushed Black Pepper, Onion Powder and Garlic Powder. Blend and enjoy.
