Mashed Cauliflower

These are so much healthier than creamy mashed potatoes and just as good. They reheat beautifully as well.

Ingredients
  

  • 1-2 heads Cauliflower
  • 1 chopped Onion
  • 3 cloves Garlic
  • 3-4 tbsp Smart Balance Lite (non-dairy buttery spread)
  • 1 tbsp Salt
  • ½ tbsp Crushed Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Instructions
 

  • Clean and wash heads of Cauliflower. Place cauliflower in a pot with cold salted water, Onion and Garlic.
  • Bring to a boil and remove from heat and let rest covered for 5 minutes or until cauliflower is very tender. With a potato masher mash cauliflower until creamy.
  • Add Smart Balance Lite, Salt, Crushed Black Pepper, Onion Powder and Garlic Powder. Blend and enjoy.
