Mango & Pineapple Chutney

These delicious condiments are worth the time to make and are great on any number of items or just by themselves. It is a wonderful staple to have on hand in the refrigerator as it can enhance many recipes or as an excellent topping to just plain rice.

Cook Time 35 minutes
Cooling Time 25 minutes
Total Time 1 hour 15 minutes

Ingredients
  

  • 4-6 Mangoes (peeled and diced to ½" pieces; or 1 can drained and rough chopped)
  • 1 cup Chopped Yellow Onion (sweet Vidalia would work great too)
  • 1 Pineapple (cored and diced into ½" pieces)
  • 2 tbsp Grated Fresh Ginger
  • Zest & Juice of Two Lemons
  • ½ cup Water
  • ¼ cup Apple Cider Vinegar
  • ¾ cup Brown Sugar
  • ½ tsp Red Pepper Flakes
  • ½ tsp Kosher Salt

Instructions
 

  • In large saucepan or pot place all ingredients. Bring mixture to a boil then simmer for about 30 minutes or until tender and most of the liquids have absorbed. Remove from heat and cool.
