Grilled Swordfish w/ Lime Marinade

Ingredients
- Swordfish (leave as whole steaks or cut into cubes for skewering)
- ¼ cup Olive Oil
- ¼ cup Fresh Cilantro
- 1 Chopped Onion
- 2 cloves Garlic
- Zest & Juice of Two Limes
- 1 tbsp White Rice Vinegar
- 1 tbsp Sugar
Instructions
- Clean, trim and rinse Swordfish. Leave as whole steaks or cut into cubes for skewering.
- In processor blend Olive Oil, Cilantro, Onion, Garlic, Lime Zest, Lime Juice, White Rice Vinegar and Sugar. Pour over swordfish and refrigerate for at least 1 hour.
- Grill or pan sear swordfish about 3 minutes on each side and let rest for 5 minutes before serving.
