Grilled Swordfish w/ Lime Marinade

Ingredients
  

  • Swordfish (leave as whole steaks or cut into cubes for skewering)
  • ¼ cup Olive Oil
  • ¼ cup Fresh Cilantro
  • 1 Chopped Onion
  • 2 cloves Garlic
  • Zest & Juice of Two Limes
  • 1 tbsp White Rice Vinegar
  • 1 tbsp Sugar

Instructions
 

  • Clean, trim and rinse Swordfish. Leave as whole steaks or cut into cubes for skewering.
  • In processor blend Olive Oil, Cilantro, Onion, Garlic, Lime Zest, Lime Juice, White Rice Vinegar and Sugar. Pour over swordfish and refrigerate for at least 1 hour.
  • Grill or pan sear swordfish about 3 minutes on each side and let rest for 5 minutes before serving.
