Ingredients
Swordfish(leave as whole steaks or cut into cubes for skewering)
¼cupOlive Oil
¼cupFresh Cilantro
1Chopped Onion
2clovesGarlic
Zest & Juice of Two Limes
1tbspWhite Rice Vinegar
1tbspSugar
Instructions
Clean, trim and rinse Swordfish. Leave as whole steaks or cut into cubes for skewering.
In processor blend Olive Oil, Cilantro, Onion, Garlic, Lime Zest, Lime Juice, White Rice Vinegar and Sugar. Pour over swordfish and refrigerate for at least 1 hour.
Grill or pan sear swordfish about 3 minutes on each side and let rest for 5 minutes before serving.
