Chilled Watermelon Soup w/ Kiwi Garnish Served in Martini Glasses

Ingredients
- 1 Watermelon
- ¼ cup Fresh Lime Juice
- 1 cup Apple Juice
- 1 cup Peach Nectar
- 2 tbsp Sugar (if and as needed - depends on sweetness of fruit)
- 1 pinch Salt
- Water (a little if needed to reach desired consistency)
- 1 Sliced Kiwi (for garnish)
Instructions
- In processor puree meat of one Watermelon (removing seeds).
- Pour watermelon into large mixing bowl or container that will hold about ½ gallon of liquid. Add Lime Juice, Apple Juice, Peach Nectar, Sugar (if and as needed - depends on sweetness of fruit), Salt and a little water if needed to reach desired consistency. Refrigerate overnight.
- Serve in martini glasses and garnish with a slice of Kiwi or a colorful orchid bloom.
