Zucchini & Squash Crostini

This is a great, light hors d'oeuvre that considers your vegetarian too.

Cook Time 15 minutes

Ingredients
  

  • 1 Diced Zucchini (diced ¼" thick)
  • 1 Diced Yellow Squash (diced ¼" thick)
  • 1 Finely Diced Onion
  • ¼ cup Olive Oil
  • 2 cloves Minced Garlic
  • 2 tbsp Chopped Fresh Basil
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • Italian Bread
  • Shaved Parmesan Cheese (for garnish)

Instructions
 

  • Sauté Olive Oil and Onion for approximately 4 minutes until onions are soft with a hint of color.
  • Add Zucchini and Squash and sauté for approximately 5 minutes (they should be tender but with a little texture).
  • Add Garlic and sauté for 2 more minutes.
  • Add a pinch of Salt and Black Pepper.
  • Prepare crostini by rubbing sliced Italian Bread with a little fresh garlic and toast until golden and crispy. Garnish with a shave of parmesan cheese and a drizzle of olive oil.
