Zucchini & Squash Crostini
This is a great, light hors d'oeuvre that considers your vegetarian too.

Ingredients
- 1 Diced Zucchini (diced ¼" thick)
- 1 Diced Yellow Squash (diced ¼" thick)
- 1 Finely Diced Onion
- ¼ cup Olive Oil
- 2 cloves Minced Garlic
- 2 tbsp Chopped Fresh Basil
- 1 pinch Salt
- 1 pinch Black Pepper
- Italian Bread
- Shaved Parmesan Cheese (for garnish)
Instructions
- Sauté Olive Oil and Onion for approximately 4 minutes until onions are soft with a hint of color.
- Add Zucchini and Squash and sauté for approximately 5 minutes (they should be tender but with a little texture).
- Add Garlic and sauté for 2 more minutes.
- Add a pinch of Salt and Black Pepper.
- Prepare crostini by rubbing sliced Italian Bread with a little fresh garlic and toast until golden and crispy. Garnish with a shave of parmesan cheese and a drizzle of olive oil.
