Tea Sandwich: Curried Chicken Salad w/ Golden Raisin on 12-Grain Bread
This delightful chicken salad is a great filling in petit phyllo cups as an hors d'oeuvre or as a luncheon entrée on a bed of crispy lettuce.

Ingredients
- Prepared Chicken Cutlets (prepared separately; diced into small cubes)
- ½ cup Hellmann's Mayonnaise
- ½ cup Sour Cream
- 3 tbsp Lemon Juice
- Zest of One Lemon
- 3 tbsp Curry Powder
- ½ tsp Salt
- ½ tsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ½ cup Golden Raisins
- ½ cup Slivered Almonds
- 1 Thinly Sliced Cucumber
- 12-Grain Bread (or the bread of your choice)
Instructions
- Mix together Mayonnaise, Sour Cream, Lemon Juice, Lemon Zest, Curry Powder, Salt, Black Pepper, Onion Powder and Garlic Powder.
- Add mixture to Chicken and blend. Then add Raisins and Almonds. Blend well and refrigerate until ready to serve.
- Make sandwiches and cut into four finger-size pieces and garnish with thin slices of cucumbers and fresh herbs or whatever you have available.
