Tea Sandwich: Curried Chicken Salad w/ Golden Raisin on 12-Grain Bread

This delightful chicken salad is a great filling in petit phyllo cups as an hors d'oeuvre or as a luncheon entrée on a bed of crispy lettuce.

Ingredients
  

  • Prepared Chicken Cutlets (prepared separately; diced into small cubes)
  • ½ cup Hellmann's Mayonnaise
  • ½ cup Sour Cream
  • 3 tbsp Lemon Juice
  • Zest of One Lemon
  • 3 tbsp Curry Powder
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • ½ cup Golden Raisins
  • ½ cup Slivered Almonds
  • 1 Thinly Sliced Cucumber
  • 12-Grain Bread (or the bread of your choice)

Instructions
 

  • Mix together Mayonnaise, Sour Cream, Lemon Juice, Lemon Zest, Curry Powder, Salt, Black Pepper, Onion Powder and Garlic Powder.
  • Add mixture to Chicken and blend. Then add Raisins and Almonds. Blend well and refrigerate until ready to serve.
  • Make sandwiches and cut into four finger-size pieces and garnish with thin slices of cucumbers and fresh herbs or whatever you have available.
