Tea Sandwich: Curried Chicken Salad w/ Golden Raisin on 12-Grain Bread
This delightful chicken salad is a great filling in petit phyllo cups as an hors d'oeuvre or as a luncheon entrée on a bed of crispy lettuce.

- Prepared Chicken Cutlets (prepared separately; diced into small cubes)
- ½ cup Hellmann's Mayonnaise
- ½ cup Sour Cream
- 3 tbsp Lemon Juice
- Zest of One Lemon
- 3 tbsp Curry Powder
- ½ tsp Salt
- ½ tsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ½ cup Golden Raisins
- ½ cup Slivered Almonds
- 1 Thinly Sliced Cucumber
- 12-Grain Bread (or the bread of your choice)
Mix together Mayonnaise, Sour Cream, Lemon Juice, Lemon Zest, Curry Powder, Salt, Black Pepper, Onion Powder and Garlic Powder.
Add mixture to Chicken and blend. Then add Raisins and Almonds. Blend well and refrigerate until ready to serve.
Make sandwiches and cut into four finger-size pieces and garnish with thin slices of cucumbers and fresh herbs or whatever you have available.
