Seared Foie Gras with Wild Berry Coulis and Micro Green Salad
This dish is truly a feast for the taste buds. There is little else as delectable as foie gras.

Ingredients
- 2 tbsp Water
- ½ cup Black Berries
- Zest & Juice of One Lemon
- 3 tbsp Sugar
- Foie Gras (prepared separately)
- Micro Greens (about ¼-½ cup per person)
Instructions
Wild Berry Coulis
- In saucepan place Water, Black Berries, Blueberries, Lemon Zest, Lemon Juice and Sugar. Bring to a boil then take off heat. Set aside.
Seared Foie Gras
- In super hot skillet lightly brushed with olive oil place Foie Gras. Sear for 1 minute on each side.
Assembly
- Gently wash and dry Micro Greens.
- Place greens on plate - drizzle with Berry Coulis and top with Seared Foie Gras
