Seared Foie Gras with Wild Berry Coulis and Micro Green Salad

This dish is truly a feast for the taste buds. There is little else as delectable as foie gras.

Ingredients
  

  • 2 tbsp Water
  • ½ cup Black Berries
  • Zest & Juice of One Lemon
  • 3 tbsp Sugar
  • Foie Gras (prepared separately)
  • Micro Greens (about ¼-½ cup per person)

Instructions
 

Wild Berry Coulis

  • In saucepan place Water, Black Berries, Blueberries, Lemon Zest, Lemon Juice and Sugar. Bring to a boil then take off heat. Set aside.

Seared Foie Gras

  • In super hot skillet lightly brushed with olive oil place Foie Gras. Sear for 1 minute on each side.

Assembly

  • Gently wash and dry Micro Greens.
  • Place greens on plate - drizzle with Berry Coulis and top with Seared Foie Gras
