Lemon Sable Cookies

Ingredients
- 1 cup Softened Butter
- ½ cup Confectioners' Sugar
- 2 tsp Pure Lemon Extract
- 2¼ cups All-purpose Flour (NOT self-rising cake flour)
- ¼ tsp Salt
- Zest & Juice of Two Lemons
Instructions
- Cream together Butter, Confectioners' Sugar and Pure Lemon Extract.
- Slowly add All-purpose Flour, Salt and Lemon Zest and Lemon Juice.
- Mix just until dough holds together. Place dough on a lightly floured surface and with a cookie cutter cut rounds. Or roll dough into 1½" logs and then roll in superfine sugar and chill for 30 minutes. Slice logs into ½" thick slices.
- Place spaced apart on cookie sheet and bake in 400℉ oven for 10-12 minutes or until set and slightly browned around edges.
