Lemon Sable Cookies

These delicate treats just melt in your mouth and are perfect with a cup of tea.

Servings 4 Dozen Small Cookies

Ingredients
  

  • 1 cup Softened Butter
  • ½ cup Confectioners' Sugar
  • 2 tsp Pure Lemon Extract
  • cups All-purpose Flour (NOT self-rising cake flour)
  • ¼ tsp Salt
  • Zest & Juice of Two Lemons

Instructions
 

  • Cream together Butter, Confectioners' Sugar and Pure Lemon Extract.
  • Slowly add All-purpose Flour, Salt and Lemon Zest and Lemon Juice.
  • Mix just until dough holds together. Place dough on a lightly floured surface and with a cookie cutter cut rounds. Or roll dough into 1½" logs and then roll in superfine sugar and chill for 30 minutes. Slice logs into ½" thick slices.
  • Place spaced apart on cookie sheet and bake in 400℉ oven for 10-12 minutes or until set and slightly browned around edges.
