Irish Soda Bread
This is a great bread anytime, not just for St. Patrick's Day. These loaves also make terrific presents.

Ingredients
- 3 cups All-purpose Flour
- ½ cup Rye Flour
- ½ cup Corn Meal
- 1 tsp Baking Soda
- 1 tbsp Baking Powder
- 1 tsp Salt
- ¼ cup Sugar
- 1 stick Cold Butter (cut into ½" cubes)
- 1½ cups Cold Buttermilk
- 1 Egg
- Zest & Juice of One Lemon
- 3 tbsp Caraway Seeds
- ½ cup Raisins (golden & dark)
- ½ cup Beer
Instructions
- Sift together All-purpose Flour, Rye Flour, Corn Meal, Baking Soda, Baking Powder, Salt and Sugar then place in mixing bowl fitted with dough hook.
- Run mixer and slowly add Butter, Buttermilk, Egg, Lemon Zest and Lemon Juice, Caraway Seeds, Raisins and Beer.
- Turn dough onto a floured surface and knead for a few minutes. The dough will be a little sticky. Form small round loaves. With straight-edge razor blade or sharp knife score dough in center with an X. Bake in 375℉ oven for 55-60 minutes or until golden brown and inserted toothpick comes out clean and dry and when tapped bread has a hollow sound.
- Serve warm with whipped butter or delicious Orange Butter.
