Andouille Sausage Bites

This spicy Louisianan sausage is so full of flavor and makes a great hors d'oeuvre. If using cured sausage follow recipe and place in 400℉ oven for 10 minutes or until browned and bubbly before serving. If using raw sausage pan-fry for 5-6 minutes on each side or in a 400℉ oven for 15-20 minutes before marinating then follow recipe.

Ingredients
  

  • 2-3 lbs Andouille Sausage (cut into 1" chunks)
  • 1 can Beer
  • 2 tbsp Olive Oil
  • 1 tbsp Old Bay Seasoning
  • 1 tbsp Brown Sugar
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • ½ tsp Black Pepper

Instructions
 

  • Cut Sausages into 1" chunks and place in a bowl with Beer, Olive Oil, Old Bay Seasoning, Brown Sugar, Onion Powder, Garlic Powder and Black Pepper.
  • Cover and let sausage marinate for 1-2 hours before finishing cooking.
  • This treat is great cooked on a hot grill or grill pan turning often until sausages are browned and sticky - about 10-15 minutes. Or baked in a 400℉ oven for 10 minutes or until browned and bubbly before serving.
