Soak Mixed Beans overnight in warm water. Drain and rinse. Place in pot and cover with cold water and bring to a boil and simmer for 1 hour or until beans are tender. Drain. Set aside.
Sauté
In a large pot sauté Onions and Garlic. When onions are soft add Carrots and Celery. Cook for 5-6 minutes and then add Zucchini and Yellow Squash.
Simmer
Add cooked Beans, Vegetable Stock, Water, Salt, Black Pepper, Onion Powder and Garlic Powder and simmer for 30 minutes or until heated through.
