Sautéed Broccoli & Red Pepper
This colorful holiday vegetable dish is not only pretty but delicious. It is the perfect side to any roast.

Ingredients
- ½ stick Butter
- 3 tbsp Olive Oil
- 1 Thinly Sliced Onion (large onion)
- 1 Diced Shallot
- 2 cloves Minced Garlic
- 2 Red Bell Peppers (cleaned and sliced into strips)
- 1 tsp Salt
- ½ tsp Black Pepper
- ¼ tbsp Sugar
- 2 heads Broccoli (large head; cut into florets)
Instructions
- In a sauté pan place Butter, Olive Oil, Onion, Shallot and Garlic.
- When onions are soft add Red Bell Pepper strips, Salt, Black Pepper and Sugar.
- While peppers are sautéing place Broccoli florets into a large pot of boiled salted water. Boil broccoli and cauliflower florets for 1-2 minutes until bright green and white and slightly tender. Remove from water and place in an ice water bath to stop cooking and lock in bright color.
- Toss cooked broccoli into onion and pepper sauté and stir to coat and bring dish up to serving heat. Taste and adjust seasoning.
