Oatmeal Raisin Cookies

These are for my great-nephew Brian. He doesn't eat chocolate so my sister, "Beanzy" as the kids call her, always has these on hand especially when we know he is coming over.

Cook Time 15 minutes
Cooling Time 10 minutes
Total Time 40 minutes

Ingredients
  

  • 2 sticks Butter
  • 1 cup Sugar
  • 1 tbsp Pure Vanilla Extract
  • 2 Eggs
  • 2 cups Cake Flour
  • 2 cups Oats
  • ½ cup Raisins
  • ½ cup Chopped Walnuts (optional)
  • 3 tbsp Pure Maple Syrup

Instructions
 

  • Cream together Butter, Sugar and Pure Vanilla Extract.
  • When smooth add Eggs and blend well.
  • Slowly add Cake Flour and blend.
  • Add Oats, Raisins, optional Walnuts and Pure Maple Syrup and blend.
  • Scoop batter into small balls onto a parchment-lined sheet pan. Bake 350℉ oven for 12-15 minutes or until golden - they should be a little soft to the touch - let cool.
