Beer-Battered Cod (or Haddock)

Ingredients
  

  • Cod (1" pieces for hors d'oeuvres - 2 per person for cocktails; 1-2 oz strips - 1-2 pieces for appetizer; 3-4 oz strips - 2-3 pieces for entrée)

Flour Mixture

  • 2 cups Flour
  • ½ cup Cornmeal
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tbsp Sugar
  • 1 tbsp Onion Powder

Batter

  • 2 cups Additional Flour
  • 2 cups Beer
  • 2 Eggs
  • 2 tbsp Corn Oil
  • 1 tsp Baking Powder

Instructions
 

  • Trim, rinse and pat dry Cod then cut into desired sizes.

Flour Mixture

  • Mix together Flour, Cornmeal, Salt, Black Pepper, Sugar and Onion Powder.

Batter

  • Mix together Additional Flour, Beer, Eggs, Corn Oil and baking powder. Add a few drops of water if and as needed if batter is too thick. If batter is too thin add a teaspoon at a time of cornmeal to thicken. Batter should be a little thicker than a pancake batter.

Cook

  • Dip cod into flour then batter and place in deep fryer. Cook 2-3 minutes or until golden brown. Serve with lemon wedges, tartar sauce and steak fries.
