Tomato-Cucumber-Feta Salad

This summery side salad is light, refreshing and colorful.

Ingredients
  

  • 4 Large Pipe Tomatoes (washed and cut into wedges)
  • 2 Seedless Cucumbers (washed and sliced into rounds)
  • 1 Medium Red Onion (peeled and thinly sliced)
  • ¼ cup Olive Oil
  • 1 tbsp Sugar
  • 1 tbsp Fresh Lemon Juice
  • ½ lb Cubed Feta Cheese
  • ½ cup Black Greek Olives
  • 1 pinch Dried Oregano
  • Fresh Basil (optional addition)
  • Fresh Dill (optional addition)

Instructions
 

  • Toss Tomatoes, Cucumbers and Red Onion in bowl and salt & pepper to taste.
  • Add Olive Oil, Sugar, Lemon Juice, Feta Cheese, Olives, Oregano and optional Basil and Dill. Toss and serve.
