Kettle Chips
These are sold by street vendors all over Hawaii. They are a wonderful addition to any cocktail party's selection of nibbles as well as a great side to a juicy burger. Serve with spicy catsup. You can also make these with sweet potatoes too - they are terrific.

- 4 Large Potatoes

- Clean Potatoes. With a medium thin mandolin blade (kettle chips are slightly thicker than regular potato chips) slice Potatoes and lightly salt.
- Deep fry until golden brown - you do want a little color to these chips.
Notes
For a healthier version toss sliced potatoes with a little olive oil and a sprinkle of kosher salt. Lay single layers on a cookie/baking sheet. Bake until golden in a 400℉ oven for 12-15 minutes turning over once during cooking. These aren't as delicious as the original fried ones but a very tasty alterative.Â
