Roasted French Carrots

Ingredients
  

  • Baby French Carrots
  • 3 tbsp Olive Oil
  • Zest & Juice of One Lemon
  • ½ tsp Sugar
  • 1 pinch Dried Mint
  • ¼ tsp Salt

Instructions
 

  • Peel and wash Carrots leaving a little of the green stem.
  • Toss carrots with Olive Oil, Lemon Zest, Lemon Juice, Sugar, Dried Mint and Salt.
  • Place on sheet pan and roast in a 400℉ oven for 30 minutes until tender and carrots have a little brown color in spots.
