French Fries
I don’t know anyone who doesn’t love a good French fry. Make them yourself and you won’t feel as guilty.

Ingredients
- 3-5 lbs Potatoes (russets are great for French fries)
- Vegetable Oil (enough to fill deep pot)
Instructions
- Peel Potatoes and cut into desired sticks or shapes and place in a bowl of ice cold salted water. Let rest for 5 minutes. Remove from water and towel dry completely.
- Heat deep pot with vegetable oil to 300℉. Place potatoes in heated oil for 3-5 minutes. Remove to paper. Pre-cook potatoes in batches. When finished increase heat and bring oil to 360℉ and refry potatoes until golden brown and tender.
- Lightly salt and serve with good catsup, some mayonnaise and some malt vinegar and kosher salt on the side.
Notes
Healthy Variation:
After removing potatoes from cold bath and drying place in a large mixing bowl and drizzle with:
Olive oil
Salt
Onion powder
Toss to coat and place single layer on a parchment-lined sheet pan and place in a 400℉ oven until tender and golden brown – about 20 minutes or so depending on the thickness of the fries.
You can also do this with sweet potatoes!
