Beer-battered Cod Bites

Ingredients
  

  • Cod (1" pieces for hors d'oeuvres - 2 per person for cocktails; 1-2 oz strips - pieces for appetizer; 3-4 oz strips - 3-4 pieces for entrée)

Flour Mixture

  • 2 cups Flour
  • ½ cup Corn Meal
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tbsp Sugar
  • 1 tbsp Onion Powder

Batter

  • 2 cups Flour
  • 2 cups Beer
  • 2 Eggs
  • 2 tbsp Corn Oil
  • 1 tsp Baking Powder

Instructions
 

Flour Mixture

  • Mix together Flour, Corn Meal, Salt, Black Pepper, Sugar and Onion Powder.

Batter

  • In a separate bowl mix together Flour, Beer, Eggs, Corn Oil and Baking Powder.
  • Add a few drops of water as needed if batter is too thick. If batter is too thin add a teaspoon at a time of corn meal to thicken. Batter should be a little thicker than a pancake batter.

Cook

  • Dip cod into flour then batter and place in deep fryer. Cook 2-3 minutes or until golden brown. Serve with lemon wedges and tartar sauce.
