Beer-battered Cod Bites

Ingredients
- Cod (1" pieces for hors d'oeuvres - 2 per person for cocktails; 1-2 oz strips - pieces for appetizer; 3-4 oz strips - 3-4 pieces for entrée)
Flour Mixture
- 2 cups Flour
- ½ cup Corn Meal
- 1 tsp Salt
- ½ tsp Black Pepper
- 1 tbsp Sugar
- 1 tbsp Onion Powder
Batter
- 2 cups Flour
- 2 cups Beer
- 2 Eggs
- 2 tbsp Corn Oil
- 1 tsp Baking Powder
Instructions
Flour Mixture
- Mix together Flour, Corn Meal, Salt, Black Pepper, Sugar and Onion Powder.
Batter
- In a separate bowl mix together Flour, Beer, Eggs, Corn Oil and Baking Powder.
- Add a few drops of water as needed if batter is too thick. If batter is too thin add a teaspoon at a time of corn meal to thicken. Batter should be a little thicker than a pancake batter.
Cook
- Dip cod into flour then batter and place in deep fryer. Cook 2-3 minutes or until golden brown. Serve with lemon wedges and tartar sauce.
