Apple-Cinnamon-Walnut Muffins

These healthy muffins are not only delicious, but the wonderful aroma will fill the house with love.

Ingredients
  

The Batter

  • 1 stick Butter
  • ½ cup Sugar
  • ½ cup Brown Sugar
  • 3 Eggs
  • 2 tbsp Pure Vanilla Extract
  • Pinch of Salt
  • 2 cups Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tbsp Cinnamon
  • ½ cup Chopped Walnuts
  • ¼ cup Rolled Oats
  • ¼ cup Raisins

The Apples

  • 2 Granny Smith Apples
  • 1 tbsp Lemon Juice
  • 1 tbsp Flour

Instructions
 

  • Cream together butter, sugar and brown sugar.
  • Add eggs, vanilla extract and salt.
  • Sift together flour, baking powder, baking soda and cinnamon and then slowly add to batter.
  • Wash, core and dice the apples, and toss with lemon juice and flour.
  • Fold apples into batter and add walnuts, rolled oats and raisins.
  • Spoon batter into greased muffin tin and bake in oven for 30-35 minutes at 350℉ or until inserted toothpick comes out clean and dry. If you are making mini muffins bake for 20-25 minutes.
