
Apple-Cinnamon-Walnut Muffins

Ingredients
The Batter
- 1 stick Butter
- ½ cup Sugar
- ½ cup Brown Sugar
- 3 Eggs
- 2 tbsp Pure Vanilla Extract
- Pinch of Salt
- 2 cups Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 2 tbsp Cinnamon
- ½ cup Chopped Walnuts
- ¼ cup Rolled Oats
- ¼ cup Raisins
The Apples
- 2 Granny Smith Apples
- 1 tbsp Lemon Juice
- 1 tbsp Flour
Instructions
- Cream together butter, sugar and brown sugar.
- Add eggs, vanilla extract and salt.
- Sift together flour, baking powder, baking soda and cinnamon and then slowly add to batter.
- Wash, core and dice the apples, and toss with lemon juice and flour.
- Fold apples into batter and add walnuts, rolled oats and raisins.
- Spoon batter into greased muffin tin and bake in oven for 30-35 minutes at 350℉ or until inserted toothpick comes out clean and dry. If you are making mini muffins bake for 20-25 minutes.
