(quinoa pasta of your choice)

(halved or quartered depending on size)

Asparagus

Additional Olive Oil
Zest & Juice of One Lemon

Vegan Parmesan Cheese

Instructions
Cook Quinoa Pasta according to package directions.
Place Tomatoes on roasting pan and season with Olive Oil, Salt, Black Pepper and Garlic Powder. Roast in 375℉ oven for 20-30 minutes.
Blanch Asparagus. With a potato peeler shave chilled asparagus.
Into hot pasta toss roasted tomatoes and shaved asparagus.
Add Additional Olive Oil, Lemon Zest, Lemon Juice, Salt, Black Pepper and optional Vegan Parmesan Cheese. Toss and serve.
