Lemongrass Chicken Bites
These tender little chicken hors d'oeuvres are really moist and delicious.

- 4 Chicken Breasts (with skin on for best flavor, but skinless is fine too)
- 3 tbsp Lemongrass Paste
- 1 tsp Salt
- ½ tsp Crushed Black Pepper
- ½ tsp Onion Powder
- ½ tsp Garlic Powder
- ½ tsp Turmeric
- 3 tbsp Olive Oil
- 1 Finely Minced Shallot
- Zest & Juice of One Lemon
Clean, trim and cut Chicken Breasts into 1-2" bite-size cubes.
Place chicken in bowl and add Lemongrass Paste, Salt, Black Pepper, Onion Powder, Garlic Powder, Turmeric, Olive Oil, Shallot Lemon Zest and Lemon Juice. Coat chicken well and let marinate for 30 minutes.
Place on baking sheet in a single layer and bake in a 400℉ oven for 10-12 minutes or until chicken is cooked. Or cook in a hot sauté pan with a little olive oil and butter for 2-3 minutes on each side.
