Grilled Cilantro Shrimp

Ingredients
  

  • cup Fresh Cilantro
  • Zest & Juice of Two Limes
  • 1 Small Onion
  • 2 cloves Garlic
  • 3 tbsp Olive Oil
  • 1 pinch Salt
  • ¼ tsp Black Pepper
  • Shrimp (21-26 ct for hors d'oeuvres; u16 count if using on a salad or entrée)

Instructions
 

  • In processor blend Cilantro, Limes, Onion, Garlic, Olive Oil, Salt and Black Pepper.
  • Clean, wash and de-vein Shrimp. Toss shrimp with cilantro marinade and let rest in the refrigerator for 1-2 hours.
  • Place shrimp on hot grill pan with a little olive oil. Cook 2 minutes on each side.
  • Place on salad. Serve with tropical rice pilaf. Or place on platter lined with sliced lemons.
