Creamy Tomato Soup

Nothing goes better with a warm grilled sandwich than a mug of creamy tomato soup or in this case Hors D'oeuvres size shots.

Ingredients
  

  • 1 stick Butter
  • 1 Grated Onion
  • 2 cloves Minced Garlic
  • 2-3 cans Crushed Tomatoes (large cans)
  • 1 qt Vegetable Stock
  • 2 cups Heavy Cream

Instructions
 

  • Sauté Butter, Onion and Garlic.
  • Add Crushed Tomatoes and simmer for 60-90 minutes.
  • Add Vegetable Stock and cook until slightly reduced.
  • Add Heavy Cream and blend.
  • Serve in shot glasses with Grilled Cheese or over rice.
