Vegetable & Cheese Strata

This is the perfect breakfast or brunch dish. It really has no rules – anything goes. These are my usual versions but do your own thing and be creative! It’s also a great dish to clean out the refrigerator.
Prep the night before and bake in the morning. The wonderful smell will wake your guests and family!

Ingredients
  

  • 2 cups Day-old bread cubes (or broken into small pieces)

Sauté

  • 1/4 stick Butter
  • 1 Diced Onion
  • 1-2 Diced Peppers (red, yellow, orange or green or a little of each color)
  • 1 Shredded Zucchini
  • 1 Shredded Yellow Squash
  • 1 cup Chopped Mushrooms of your choice
  • 1 cup Vegetable of your choice (feel free to add any vegetable that you like to the amount you desire)

The Cheese

  • 1 cup Shredded Cheddar or Swiss Cheese (you can use mozzarella, goat cheese, fontina, American - any cheese that melts and isn't too strong)

The Egg Batter

  • 6 Eggs
  • 1 cup Heavy Cream
  • 1 cup Milk
  • ¼ stick Melted Butter
  • Pinch of Salt & Pepper
  • Any Fresh Herbs You Like

Instructions
 

  • This is to be prepared the night before and then baked in the morning.

First Step

  • Place bread cubes into a large, buttered baking dish.

Sauté

  • Sauté ¼ Stick Butter, Onion, Peppers, Zucchini, Yellow Squash, Mushrooms and anything else you like.
  • Spread sautéed items over bread.

The Cheese

  • Add a layer of your cheese of choice on top of sautéed items.

The Egg Batter

  • Mix together eggs, heavy cream, milk, melted butter, pinch of salt & pepper and any fresh herbs you like.
  • Pour egg mixture over items in baking dish, cover with plastic wrap and refrigerate overnight.

Bake!

  • In the morning bake in oven for 1 hour at 350℉. Let sit for 10 minutes and serve.
