Tomato & Peach Salad

This unique, summery side salad is an unexpected blend of flavors. It will serve 8-10 guests. It is a real hit in August when tomatoes and peaches are in season. There is nothing better than a Jersey tomato and a Georgia peach getting together in this dish.

Ingredients
  

  • 4 Large Ripe Tomatoes (washed, sliced and cut into wedges)
  • 4 Ripe Peaches (washed, sliced and cut into wedges)
  • 6 Large Leaves of Fresh Basil (cut into strips - chiffonade)
  • ¼ cup Olive Oil
  • 1 tbsp Sugar
  • 1 tbsp Fresh Lemon Juice

Instructions
 

  • Toss Tomatoes and Peaches in a bowl and salt and pepper to taste.
  • Add Basil, Olive Oil, Sugar and Lemon Juice. Toss and serve.

Notes

Optional
Toss ½ cup crumbled feta and 2 cups cubed watermelon to salad.
