The Melrose Kentucky Derby Pie

A southern classic - this dessert is great just as is or the perfect base for ice cream, fruit and whipped cream.

Ingredients
  

  • Pie Crust (prepared separately)
  • 3 Eggs
  • 1 cup Sugar
  • ½ stick Melted Butter
  • ½ cup Light Corn Syrup
  • ¼ cup Dark Molasses
  • ½ cup Bourbon
  • ½ tsp Cinnamon
  • ½ cup Chopped Pecans
  • ½ cup Whole or Pecan Halves
  • ½ cup Mini Chocolate Morsels

Instructions
 

  • Blind Bake one Pie Crust. Place pie crust in baking dish, cover with foil or parchment paper and fill with dried beans or dry rice. Place in a 350℉ oven for 12-15 minutes. Remove from oven and remove beans and paper - let cool.
  • Make filling by placing Eggs, Sugar, Melted Butter, Light Corn Syrup, Dark Molasses, Bourbon, Cinnamon, Chopped Pecans, Whole or Pecan Halves and Mini Chocolate Morsels in mixing bowl and blend together.
  • Pour into prepared pie crust. Bake pie for 40-50 minutes in a 350℉ oven or until pie is set and slightly firm to a gentle touch. Let cool completely before serving.
  • Garnish with a dollop of fresh whipped cream and a sprig of mint.
