Sweet Red Pepper Coulis
This sauce is absolutely delicious on just about anything you can think of. This recipe is dedicated to my nephews Jud and Ed, who loved this straight out of the container.
Use this versatile sauce hot on just about anything or refrigerate and use cold as a dip for crudités.

Roughly Chopped Large Onions

Chopped Garlic

Red Bell Peppers
(cleaned, rinsed and roughly chopped)

Heavy Cream

Pepper
Instructions
Sauté Butter, Olive Oil, Onion, Garlic and Red Peppers. Cover and slow cook until onions and peppers are soft - approximately 10-15 minutes.
Add Heavy Cream, Salt and Pepper. Cook slowly until bubbly and slightly reduced - about 5-8 minutes.
Put mixture in processor and blend thoroughly. Pour into sieve strainer over a clean bowl and run pepper sauce through strainer.
