Steak Fries (Chips)
These thick French fries are crunchy on the outside and creamy soft on the inside.

- 3-5 lbs Potatoes (russets work great)
- ½ cup Fine Flour (Wondra)
- 1 tbsp Salt
- ½ tbsp Onion Powder
Wash but don't peel Potatoes. Cut into wedges and place in a pot of cold salted water. Bring to a boil and remove from heat. Let rest covered for 3-5 minutes. Potatoes will still be slightly firm. Drain and dry on a clean kitchen towel.
Mix together Fine Flour, Salt and Onion Powder.
Lightly dredge par-cooked potatoes in flour mixture then fry in vegetable or canola oil until golden and crispy.
Serve with malt vinegar and mayonnaise for dipping.
