Spring Pea Soup
This light fresh pea soup is welcome sign of spring. It is similar in color to Split Pea Soup but much more delicate.

- ¼ cup Olive Oil
- 2 Diced Onions
- 2 cloves Garlic
- 1 tbsp Dill Weed
- ½ tsp Salt
- ½ tsp Black Pepper
- 2 bags Fresh or Frozen Peas
- 3 qts Vegetable Stock
- Zest & Juice of One Lemon
In saucepan sauté Olive Oil, Onions, Garlic, Dill Weed, Salt and Black Pepper.
When onions are soft and translucent add Peas, Vegetable Stock, Lemon Zest and Lemon Juice. Simmer for 30 minutes.
Puree soup with emersion blender or in a traditional blender in batches. Adjust seasonings. Serve with an optional dollop of sour cream, a sprig of dill, a touch of lemon zest and a few fresh peas.
