Smashed Potatoes
This is my second nephew Jud's favorite. It is a very easy comfort food dish to make that delivers lots of flavor.

Boil the Potatoes
- 5-10 lbs Baby Bliss Red Potatoes
- 2 cloves Minced Garlic
- 3 tbsp Kosher Salt
- ½ stick Butter
Smash the Potatoes
- ½ stick Butter
- 1 tbsp Salt
- ½ tbsp Black Pepper
Boil the Potatoes
Wash Baby Bliss Red Potatoes and leave whole. Place in a large pot and cover potatoes with cold water. Then add Garlic, Kosher Salt and Butter.
Bring to a boil and let simmer 10 minutes or until potatoes are fork tender. Reserve ½ cup cooking liquid then drain.
Smash the Potatoes
Return Cooked potatoes to the pot. Mash with a potato masher until very chunky.
Add Butter, Salt and Black Pepper and continue mashing a little more. Taste to adjust seasoning and add a little of the reserved liquid if potatoes are too dry.
