Sautéed Collard Greens w/ Black-Eyed Peas

If you want to have a prosperous New Year you must eat this dish on New Year's Eve or Day. It also brings good luck to you and your family.

Ingredients
  

  • 1 Diced Onion (large onion)
  • 3 cloves Minced Garlic
  • 3 tbsp Olive Oil
  • ¼ stick Butter
  • ½ lb Pancetta (optional; or diced bacon)
  • 1 bunch Collard Greens (large bunch; washed and cut into small pieces)
  • ½ cup Vegetable Stock
  • 2 cans Black-Eyed Peas (drained and rinsed)

Instructions
 

  • In saucepan sauté Onion, Garlic, Olive Oil, Butter and optional Pancetta.
  • When onions are soft and pancetta is browned add Collard Greens, Vegetable Stock and Black-eyed peas.
  • Simmer for 30 minutes or until greens are tender.
