Roasted Fine-Herb Potatoes
I like to use fingerling potatoes for this dish but you can use just about any potato you like.

- 5 lbs Fingerling Potatoes
- ¼ cup Olive Oil
- ½ tbsp Salt
- ½ tbsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 2 tbsp Parsley Flakes
- 2 tbsp Dried Dill Weed
- 1 tbsp Dried Tarragon
- ½ tsp Dried Rosemary
- ½ tbsp Sugar
Wash, dry and cut in half lengthwise Fingerling Potatoes. Place in mixing bowl.
Add Olive Oil, Salt, Black Pepper, Onion Powder, Garlic Powder, Parsley Flakes, Dill Weed, Tarragon, Rosemary and Sugar and toss to coat.
Place seasoned potatoes in baking dish and roast in a 400℉ oven for 30 minutes or until potatoes are golden brown but soft and fluffy inside.
