If using dried beans soak overnight in cold water - rinse - bring to a boil with fresh water and simmer for 1 hour. Drain again and rinse. DO NOT SALT beans while cooking as it will only make them tough.
For canned beans, drain and rinse Red Kidney Beans.
In sauté pan place Olive Oil, Onions, Green Pepper and Garlic.
When onions are soft add Beans, Cilantro, Dried Oregano, Salt, Black Pepper, Hot Sauce and optional Jalapeño.
Simmer for 30 minutes. With potato masher mash most of the beans to a paste - leave some texture for interest.
