Red Wine Demi-glace

Ingredients
  

  • 2 cups Good Red Wine
  • 2 tbsp Butter
  • 1 tsp Sugar
  • 1 pinch Salt
  • ΒΌ tsp Crushed Black Pepper

Instructions
 

  • In saucepan simmer Red Wine. When hot (DO NOT BOIL) add Butter, Sugar, Salt and Black Pepper. Simmer slowly and stir often. DO NOT RUSH or mixture will break. Liquid should reduce by half.
  • Let cool to use as a glace or drizzle warm over grilled and roasted meats.
