Fresh Sliced & Peeled Peaches
(or 1 large drained jar of peaches)
Batter

Zest & Juice of One Lemon

Crumb Topping

Dark Brown Sugar

Flour

Salt

Cold Butter
(cut into cubes)
Instructions
In buttered baking dish place Peaches.
In bowl of stand mixer cream together Butter, Sugar and Salt.
Add Eggs, Pure Vanilla Extract, Lemon Zest and Lemon Juice.
Add Flour, Baking Soda, Baking Powder and Cinnamon. Blend well and pour batter over fruit.
Crumb Topping
In mixing bowl place Dark Brown Sugar, Flour, Salt and Cold Butter Cubes.
With cool hands (wash hands with cold water and towel dry) crumble into large crumb chunks. Sprinkle over batter.
Cook
Bake in 350℉ oven for 40-45 minutes or until golden.
Notes
This can be done with many fruits such as apples, blueberries, pears, mixed berries, etc... be creative!
