Fusilli Pasta
Alfredo Sauce
1
stick
Butter
1
Small Onion
(pureed)
2
cloves
Garlic
(pureed with the onion)

cup
Flour
1
qt
Heavy Cream
2
cups
Milk
1
pinch
Salt
½
cup
Shaved Parmigiano Reggiano
Finish

tbsp
Grated Pecorino Romano

tbsp
Toasted Breadcrumbs

Red Caviar
(optional)
½
tsp
Black Caviar
(optional)
Shaved Black Truffles
(optional)
Instructions
Prepare Pasta according to directions.
Alfredo Sauce
Sauté Butter, Onion and garlic.
Add Flour and cook for 2-3 minutes but be careful not to let the roux brown.
Add Heavy Cream, Milk, Salt and cook until sauce thickens. Then add Parmigiano Reggiano.
Toss with cooked pasta and add Pecorino Romano, Breadcrumbs.
Plate pasta and top with either Red Caviar, Black Caviar
or
Shaved Black Truffles.
