Northern Cheesecake - Laurie's New York-style Cheesecake

The classic New York-style cheesecake is rich, thick and creamy and always the star of any dessert.

Ingredients
  

Crust

  • 1¾ cups Graham Cracker or Cookie Crumbs
  • ½ tsp Ground Cinnamon
  • ½ cup Melted Butter

Filling

  • 2 packages Cream Cheese (8 oz packages)
  • 1 cup Sugar
  • 3 Eggs
  • 1 tbsp Vanilla
  • 1 pinch Salt
  • 3 cups Sour Cream

Instructions
 

Crust

  • Mix together Graham Cracker (or Cookie Crumbs), Ground Cinnamon and Melted Butter. Pack into spring form pan on bottom & sides. Reserve some for top of cake.

Filling

  • Cream together Cream Cheese and Sugar.
  • Add Eggs and beat well.
  • Add Salt & Vanilla and beat.
  • Fold in Sour Cream.
  • Pour batter into prepared crust and sprinkle reserved crumbs on top.

Cook

  • Bake at 370℉ for 50 minutes then turn off oven and open door a little and leave cake in for about 30 more minutes.
  • The filling will look a little soft - refrigerate overnight and serve.
