Lemon Sorbet with Strawberries & Blueberries
This is such a welcomed treat on a hot summer day. If you don't want to make your own there are so many great store-bought varieties or go to your local ice cream store, they probably carry sorbet.

Total Time 3 hours hrs 27 minutes mins
- 2 cups Sugar
- 2 cups Water
- Zest & Juice of Two Lemons
- 6 cups Ice
- 2 cups Fresh Lemon Juice (to be added if too sweet)
- Strawberries (washed and dried)
- Blueberries (washed and dried)
Lemon Simple Syrup
In a saucepan place Sugar, Water, Lemon Zest and Lemon Juice and bring to a boil.
Let syrup boil for 1-2 minutes then reduce to simmer and cook for 4-5 minutes. Turn off heat and let cool and thicken.
Ice
If you cannot get shaved or crushed ice, in a strong blender or food processor place ice (probably half at a time).
Pulse to crush then add ½ the lemon simple syrup and blend. Repeat with the rest of the ice and syrup.
Blend together and taste to adjust sweetness and lemon. Add more fresh Lemon Juice if too sweet and a bit more sugar if too tart.
Freeze in a plastic container scraping every ½ hour until you have a smooth sorbet, or finish using an ice cream machine running to achieve a smooth and creamy texture. Freeze until ready to serve.
Serve with Strawberries and Blueberries to stay true to the color scheme.
