Instructions
Cookie Crust
Cream Butter, Confectioners' Sugar and Lemon Extract.
Add Flour and Chopped Almonds.
Dough should be a little crumbly. Press cookie dough in buttered or sprayed 9x13 baking pan and bake in 350℉ oven for 15-20 minutes or until lightly golden.
Lemon Curd Filling
In mixer cream Butter, Sugar, Lemon Juice, Lemon Zest and Salt.
Add Eggs and Flour. Blend well.
Cook
Pour over baked cookie crust. Bake in 350℉ oven for approximately 25-30 minutes or until edges begin to brown.
Let cool to set, dust with Additional Confectioners' Sugar and cut into desired sizes and enjoy.
