- Shrimp (30ct is good if you are making them whole)
- 2 cloves Crushed Garlic
- ½ tsp Salt
- 2 tbsp Grated Ginger
- 1 can Chickpeas (drained & rinsed)
- ½ cup Flour
- 1 Egg
- ½ cup Buttermilk
- 1 tsp Curry Powder
- ¼ tsp Cayenne Powder
- ½ tsp Sugar
Wash, peel & devein Shrimp and place in mixing bowl.
Add Garlic, Salt and grated Ginger and toss to blend. Refrigerate for at least 2 hours.
In bowl of processor place Chickpeas, Flour, Egg, Buttermilk, Curry Powder, Cayenne Powder and Sugar. Run processor until smooth. Let mixture rest 10 minutes before using.
If making whole pieces of shrimp dip shrimp into mixture and fry in peanut oil until golden brown.
For fritters: add chopped shrimp to chickpea mixture. Spoon or scoop batter into hot peanut oil and cook 1-2 minutes on each side until fritters are golden brown.
