Italian Wedding Cookies
Delicious little one-bite cookies that are perfect with an espresso.

- 1½ cups Softened Butter
- ¾ cup Powdered Sugar
- 2 tsp Pure Vanilla Extract
- 2½ cups Flour
- ¼ tsp Fine Salt
- 1 cup Finely Chopped Walnuts
- Additional Powdered Sugar (for rolling cookies)
Cream together Softened Butter, Powdered Sugar and Pure Vanilla Extract.
In a separate bowl whisk together Flour and Fine Salt. Add flour mixture to butter and gently blend.
Add Walnuts to dough and chill dough at least 30 minutes or until firm.
Scoop chilled dough into 1" balls and place on parchment lined baking sheet. Bake in a 400℉ oven for 10-12 minutes or until light golden brown.
While cookies are still warm but not hot roll cookies in Additional Powdered Sugar.
Store in air-tight tins. You might want to re-powder before serving but not necessary.
