Grilled Citrus Chicken Canapé w/ Peach Chutney

Ingredients
  

Chicken

  • 3 Chicken Breasts (cleaned and trimmed)
  • 1 can Peach Juice (drain small can of peaches and reserve liquid; set peaches aside)
  • Zest & Juice of One Lemon
  • Zest & Juice of One Lime
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ¼ tsp Dried Tarragon
  • 1 tbsp White Vinegar
  • ½ tbsp Sugar

Peach Chutney

  • 1 can Peaches - Diced (use previously set aside peaches or fresh if available)
  • 1 Small Diced Red Onion
  • ¼ cup Chopped Cilantro
  • 2 tbsp Olive Oil
  • 1 tbsp White Rice Vinegar
  • ½ tbsp Sugar
  • 1 pinch Salt

Instructions
 

Chicken

  • Clean and trim Chicken Breasts.
  • In mixing bowl place Chicken Filets, Peach Juice, Lemon Zest, Lemon Juice, Lime Zest, Lime Juice, Onion Powder, Garlic powder, Tarragon, White Vinegar and Sugar.
  • Marinate chicken for at least 30 minutes or longer. Place on hot grill pan lightly brushed with olive oil.
  • Cook 3-4 minutes on each side. Let rest before slicing or serving.

Peach Chutney

  • In mixing bowl place Diced Peaches, Red Onion, Cilantro, Olive Oil, White Rice Vinegar, Sugar and Salt. Blend well.
  • Place in a saucepan and simmer for 30-40 minutes until sauce is thick. Let cool.

Serving

  • Place a thin slice of grilled chicken on an endive leaf and top with a little peach chutney.
